There are moments when I come home from school and just crave something sweet for lunch. But most of the time I’m just really lazy when it comes to cooking for myself so I just mix some ingredients together and hope for the best to happen… hehe
Lately, however, I’ve been making the American Pancakes with a recipe by Jamie Oliver, to which I just added some extra ingredients (original recipe here).
For about 5 – 8 pancakes you will need:
· 140ml milk
· 115g plain flour
· 110g sugar
· 1 heaped teaspoon baking powder
· 1/2 teaspoon vanilla extract
· 1 pinch salt
· 3 eggs
First you will have to separate the eggs – the whites coming into a slightly higher bowl to whisk them in later and the yolks into another.
Then add the milk, flour, sugar, baking powder and vanilla extract to the egg yolks and mix them until smooth.
Now you will have to whisk the egg whites and the salt until stiff and blend it in with the milk-flour-sugar-mixture.
Heat your pan and put some of your mixture into it. Fry your pancakes for a couple minutes until they’re gold-brown and flip them with a spatula or anything else. Repeat this until the batter is empty, of course.
Last but not least serve them with whatever you’d like – preferably with something sweet as you’ve mixed sugar into these – nutella, jam, syrup, etc.

The amount of pancakes always varies whenever I’m making these so don’t worry if you just get five one time and the next time you get nine or something. It really depends on the size of your pan and the amount of batter you use for every single pancake.
